⅔ cup icing (confectioner's) sugar, sifted
1 teaspoon vanilla extract
2 tablespoons brandy
250g (8¾oz) butter softened

1. Beat the butter, icing sugar, brandy and vanilla extract in the bowl of an electric mixer for 7 - 10 minutes or until light and creamy.
2. Store covered in the refrigerator for up to 1 week.
