Glazed Christmas Ham

cup dijon mustard
⅓ cup (2 fl oz) honey
⅓ cup brown sugar
cup (4floz) fresh orange juice
cup dijon mustard
8kg (18lb) leg ham (cooked)
cloves for studding

1. Preheat the oven to 190C (375F).
2. Remove the skin from the ham and discard.
3. Score the fat in a diamond pattern.
4. Stud a clove in the middle of each diamond.
5. Place the ham in a baking dish lined with a few layers of non-stick backing (parchment) paper.
6. To make the glaze, place the orange juice, sugar, mustard and honey in a small saucepan over medium heat.
7. Simmer stirring occasionally, for 15 minutes or until thickened.
8. Brush the ham with the glaze and bake for 10 minutes.
9. Glaze again and bake for another 10 minutes.
10. Repeat and bake for a final 10 minutes or until golden.
11. Allow the ham to stand for 5 minutes before carving.
