Easy Ice Cream Christmas Pudding


1 teaspoon ground cinnamon
1 cups mixed dried fruits, roughly chopped
2 tablespoons Grand Marnier or brandy
2 teaspoons mixed spices
3 to 4 litres vanilla or chocolate ice cream

Serves 8 to 10

1. In a large bowl marinade the fruit in either Grand Marnier or brandy for at least 4 hours
2. Remove from the freezer the ice cream and allow it to soften (but not to form a liquid)
3. Add the ice cream, almonds, spices and cinnamon to the mix fruit and stir the mix thoroughly
4. Cover the bowl with cling film and place the mix in the freezer
5. When it is time to serve, remove from the freezer, dip the bowl in hot water, turn upside down and serve
