Gebackener Karpfen (Fried Carp)

Ingredients

¼lb. shortening (not butter)
1 sliced lemon
2 beaten eggs
3 to 3½lb carp fillet
bread crumbs
flour
salt

Method

1. Wash the fillet
2. Cut fillet into slices
3. Sprinkle with salt and leave for an hour
4. Dip fillet into flour, then beaten eggs and then bread crumbs
5. Fry slices in shortening on both sides until golden brown
6. Garnish with lemon

Muskatnockerln (Nutmeg Macaroons Recipe)

Ingredients

½ teaspoon cinnamon
½ teaspoon nutmeg
130g (5oz.) golden granulated sugar
150g (5oz.) glazing chocolate
150g (5oz.) powdered almonds
150g (5oz.) powdered hazelnuts
2 to 3 tablespoon flour
3 eggs
3 tablespoon flaked almonds for decoration

Method

1. Beat eggs and sugar in a bowl until thick and foamy.
2. Add the spices, flour and ground nuts to the egg mixture in spoonfuls
3. Place the mix on parchment paper, using a moistened spoon to form small mounds
4. Leave for an hour at room temperature
5. In a preheated oven of 220° C / 425° F bake the macaroons for approx. 5 minutes
6. Glaze half of each macaroon (cooled) with melted chocolate and then decorate with flaked almonds.
Makes approx. 30 macaroons
