Cougnou (Bread of Jesus)


cup granulated sugar
cup raisins
1 cup + 2 tablespoons coarse sugar crystals
1 teaspoon cinnamon
1 cups warm milk
2 teaspoons salt
5 teaspoons active dry yeast
6 large eggs
8 cups all purpose flour
8oz softened butter
3 egg yolks
3 teaspoons milk

1. Mix flour and salt in a large bowl
2. Stir in milk and then yeast
3. Stand for 10 minutes
4. Then add in eggs, cinnamon and granulated sugar and beat the mixture
5. Gradually add the softened butter
6. On a floured board, turn out the dough and knead, until the dough does not stick to the surface
7. Place the dough into a greased bowl, cover with a damp towel and let the dough sit for one hour
8. Empty the bowl onto work surface and knead in 1 cup of sugar crystals and raisins.
9. Divide mix into six balls and lightly grease two cookie sheets
10. Form three balls, so to make a head, torso and legs to make the shape of a body (although the design does vary)
11. Allow to double in size
12. In a preheat oven of 220C / 430F
13. Mix the egg yolks and 3 teaspoons of milk and brush the loaf with the mix
14. Sprinke the remaining sugar crystals on the loaf
15. Bake for 25 minutes or until the loaf is goldern brown.
Makes 2 loaves.
