Ceia de Natal (Brazilian Christmas Turkey)

Ingredients


½ cup olive oil
½ cup onion, chopped
1 (12 lb) turkey
1 cup lime juice
1 cup parsely chopped
2 bay leaves
2 onions, diced
2 cups Brazilian Cachaca or light rum
2 cups water
4 ripe tomatoes, diced
6 cloves garlic, chopped

Method

1. In a large food bag (or bowl covered with cling film) place the turkey and all the other ingredients and allow to marinade overnight in the fridge
2. After marinading the turkey, remove from the food bag, place in a large roasting tin (and covered in foil) and then into a preheated oven of 425°F
3. From the marinade drain the liquid & add the vegetables and seasoning to the cavity of the turkey
4. Roast the turkey at 425°F/220°C for 30 minutes, then reduce the heat to 350°F/180°C and cook for a further 3½ hours (you may need to adjust your timings accordingly). Ensure you baste the turkey periodically
5. For the last 30 minutes of the roasting uncover the turkey to allow to brown
6. The turkey should be done once the juices run clear from the thigh of the bird.

Feijoada (Brazilian Black Beans)

Ingredients


2 bay leaves
2 cloves garlic
2lbs baby back pork ribs
2lbs choriço sausage
3 tablespoons olive oil
3lbs carne seca or salted cured beef
8 cups black beans, dried

Method

1. Cover the beans by least 4 inches extra of water in a bowl and soak overnight
2. Drain the beans and in a large saucepan cover with water by at least 3 inches and bring to the boil
3. Cut both the carne seca and choriço into 1 inch pieces and cut the ribs into 2 rib pieces
4. Add the bay leaves with the meat to the beans and simmer for about 2 hours, stir occassionally (You may need to add water to avoid the dish drying out)
5. Finely chop the onion and garlic and fry in some olive oil until golden brown
6. From the beans add a couple of ladles of the beans to the onions and mash together
7. Add the mash back into the beans, this is to help the dish thicken
8. Cook the beans for a further hour (adding water if required), the bean mix should become creamy
9. Remove the bay leaves and serve the feijoada with rice.
