Ingredients

cup sugar
1 cup lard
1 teaspoon baking powder
2 teaspoons vanilla
3 eggs
4 cups white flour
jam of your choice

Method

1. In a bowl beat the eggs well and add sugar until light and foamy
2. Melt the lard and when cooled slowly mix with the eggs and sugar
3. Slowly add the flour to the mix until the mixture forms a dough
4. Divide into 3 balls and roll each until inch thick
5. With a cookie cutter cut out circles and in half the circles cut out an ⅜ inch hole in the centre
6. In a preheated oven of 375F bake for 8 to 10 minutes
7. Remove from the oven. Spread jam on the whole halves and place the halves with holes on top
8. Dust the top with icing sugar if desired.
Makes approx. 48 cookies

Haricot and Potato Dish

Ingredients

cup of vegetable oil
1 onion, large
1 dessertspoon of mint, fresh chopped
1 teaspoon of paprika
1 cups of haricot beans
2 dessert spoons of parsley, fresh chopped
6 potatoes

Method

1. Ideally soak haricot beans in cold water over night. Although tinned haricot beans can be used
2. Drain and rinse the beans well under cold water
3. Finely chop the onion. Peel and cube the potatoes.
3. Boil the haricot beans. When the beans start to become soft add the onions and potatoes
4. Add the oil and the paprika and boil until the beans and potatoes become really soft
5. Add the sprinkle the mint and parsley as garnish.
