Lanttulaatikko (Rutabaga Casserole)

Ingredients

teaspoon salt
1 to 2 eggs
1 to 2 large rutabagas / swedes
2 tablespoons flour
150 ml cream
150 ml dark molasses
breadcrumbs

Method

1. With a sturdy knife peel and slice the rutabaga/swede into chunky pieces
2. Boil the swede in water (unsalted) until tender and then drain the water from the saucepan
3. Place the saucepan, uncovered back on a low heat to remove the excess moisture
4. Mash or puree the swede in a food processor and allow to cool
5. Mix in the flour, eggs, molasses and half the cream
6. With the remaining cream, whip it until stiff and then fold into the mix
7. Pour into a buttered casserole and cover the mix with breadcrumbs
8. In a preheated oven of 350F/175C place the casserole in the oven for 1 to 1 hours.

Joulukinkku (Christmas Ham)

Ingredients

1 raw shank-in ham (4 to 6 kg or 9 to 13 lbs)
1 tablespoon mustard
1 tablespoon sugar
2 cups salt, course
2 cups sugar
2 tablespoons sugar
3 tablespoons breadcrumbs
3 tablespoons salt
5 litres water
rye flour and water

Method

1. Rub the ham with salt and sugar
2. Boil the ham in a large saucepan. Allow 30 minutes for each lb
3. Skim of the foam and then let the ham cool.
4. Place the ham in brine for two hours
5. Mix the water and the rye flour into a paste. Or instead just use foil.
6. Cover the ham with the paste
7. Place the ham in a shallow roasting dish. Pour water in the bottom.
8. In a preheated oven of 250C (450F) cook the ham for 3 hours
9. Mix the mustard, breadcrumbs and sugar
10. Remove the rye crust and baste the ham with the mustard, breadcrumb and sugar mix
11. Recover with the rye crust or foil and place back in the oven until the ham browns.
