⅛ teaspoon salt
⅓ cup cocoa powder, unsweetened
cup white sugar
cup caster sugar
cup cocoa powder, unsweetened
1 teaspoon vanilla extract

6 egg whites
6 egg yolks
icing sugar for dusting

1. Mix the cream, icing sugar, the cup of cocoa and the 1 teaspoon vanilla into a thick mixture, then refrigerate.
2. Beat the egg yolks and the cup of white sugar until thick and pale in a large bowl
3. Mix in the ⅓ cup of cocoa, 1 teaspoon of vanilla extract and salt
4. In a clean bowl beat the egg whites into soft peaks
5. Gradually add and beat in the cup of white sugar to the egg whites until the peaks are stiff
6. Straight away fold the yolk mix into the whites
7. In a prepared pan (10 x 15 inch) lined with parchment paper, pour in the mix
8. Ensure this is spread evenly
9. In a preheated oven 375F / 190C bake for 12 to 15 minutes. The cake should spring back after being touched
10. Dust a teatowel with icing sugar and turn the cake out onto the towel whilst warm
11. Remove the parchment paper
12. From the short edge of the cake start to roll the cake up the towel
13. Allow to cool for 30 minutes
14. Unroll the cake on the teatowel
15. Spread the filling on the cake to within an inch of the edge
16. Roll the cake back up with the filling inside
17. Ensure the seam side is placed on the place side and refrigerate until the cake is to be served
18. Dust the cake with icing sugar before serving
