Christmas Pudding

Ingredients

1 lemon, zest only
1 level teaspoon freshly grated nutmeg
1 level teaspoon ground cinnamon
1 level teaspoon mixed spice
55g (2oz) flaked almonds
110g (4oz) candied peel, chopped
110g (4oz) fresh white breadcrumbs
110g (4oz) plain flour
225g (8oz) currants
225g (8oz) golden caster sugar
225g (8oz) vegetarian suet
340g (12oz) raisins
340g (12oz) sultanas
pinch of salt

Other Indgredients
5 eggs, beaten
150ml (5fl oz) brandy or rum

Method

1. Lightly grease a pudding bowl
2. Mix all the dry ingredients together in a large bowl
3. Stir the eggs and brandy into the dry mix
4. Add the mix into the pudding bowl(s)
5. Place on the top of the pudding bowls baking parchment and foil & secure with cooking string
6. Make a string handel so it is easy to lift the pudding bowl
7. In a large streamer of boiling water, boil for 5 to 6 hours
(Or put the bowl on inverted saucers in a large roasting tin and cover with foil)
8. Allow to cool
9. Change the parchement & foil with fresh one and tie as before
10 Store the bowl in a a dark and cool place until Christmas
11. Steam again for a further 2 hours on Christmas Day and serve
Make a pudding a couple of months before Christmas Day and feed it with alcohol regulary.

Brandy Butter

Ingredients

125g (4oz) icing sugar
125g (4oz) butter unsalted, softened
2 tablespoons boiling water
3 tablespoons brandy

Method

1. Beat together softened butter and icing sugar into a cream
2. Beat in boiling water and brandy until the mix is smooth
3. Cool and then chill in the fridge and serve with Christmas pudding.
