Kourabiethes (Small Almond Cakes)

Ingredients

cup sugar
1 egg white
1 tablebspoon cinnamon powder
1 teaspoon baking soda
1 cups olive oil
1lb 9oz (700g) blanched and ground
1lb 9oz (700g) butter
10 cups (1200g) flour
3 egg yolks
3 tablespoons cognac
4 cups of icing sugar for coating

Method

1. Beat the butter, oil and sugar in a large bowl until fluffy
2. Dilute the soda in the cognac
3. Stir in the cognac, cinnamon, almonds and beaten eggs into butter mix
4. Slowly combine the flour into the mix
5. Knead the mix into a dough on a floured surface
6. Form the dough into walnut sized balls
7. On a greased baking tray, place the balls
8. In a preheated oven 350F / 180C, bake for 15 to 20 minutes
9. Remove from oven and allow to cool
10. Heavily coat the cakes in icing sugar.

Kreas Me Patates (Meat and Potato Casserole)

Ingredients

Choice of meats:
1 shoulder of lamb - meat removed and cut into cubes
1kg stewing steak
2kg beef cut into cubes

1 kg potatoes, peeled and thickly sliced
2 carrots, peeled and thinly sliced
2 medium onions, finely sliced
2 tablespoons parsley finely chopped
2 tablespoons vegetable oil
3 tablespoons olive oil
400g canned tomatoes chopped (or 500g fresh tomatoes, peeled and sliced)
salt and black pepper

Method

1. Heat the oils together in a large saucepan.
2. Brown the pieces of meat individual and place to the side on a plate
3. Add the onions and carrots to the saucepan and cook until softened
4. Add the tomatoes and slowly bring to the boil
5. Return the meat to the saucepan and ensure the meat is covered with liquid. (If not add a small amount of water)
6. Cover and cook for approximately 50 to 60 minutes or until the meat is tender
7. Season with salt and pepper
8. Add the parsley and potatoes and again ensure that the casserole is covered in liquid
9. Cover and cook for a further 20 to 30 minuts until the pototoes are soft
Alternatively
10. Cut the potatoes thickly and fry them before adding them to the casserole, cover and cook for 10 minutes.
