Dutch Rollade

Ingredients

1 bay leaf, ground
1 kg loin fillet of beef or pork or can be combined
100g butter or margarine
pepper
salt

Method

1. Ensure that your fillet of meat is rectangular (even if combining two meat types)
2. Sprinkle the meat with salt and pepper and ground bay leaf
3. Rub into the meat and then roll the meat
4. With kitchen string tie the meat to ensure the shape of the roll (rollade)
5. Let the rollade rest overnight in the fridge
6. Heat the butter in a saucepan tin until it browns
7. Brown the rollade in the butter
8. Add hot water to the saucepan until half the rollade is covered.
9. Cover the pan and simmer for approximately 45 to 60 minutes
10. Half way through the cooking process turn the rollade
11. Take the meat out of the saucepan and sit for 10 minutes before carving

Pastry Ingredients

˝oz (15g) caster sugar
1 egg, beaten
1 egg, beaten
1oz (25g) butter or lard
1˝ teaspoons dried yeast
5 tablespoons warm water
5oz (125g) butter
8oz (225g) plain flour
pinch of salt

Almond Paste Ingredients

1 small egg, beaten
1 lemon, finely grated rind
4˝oz (120g) caster sugar
4˝oz (120g) ground almonds
6 glacé cherries, halved

Decoration Ingredients

1 tablespoon water
3 to 4 tablespoons apricot jam
4oz (100g) thin lemon glace icing
6 glacé cherries, halved

Method

1. Into a warm bowl, sift the flour and salt
2. Blend in the yeast, sugar and water and leave for 10 minutes
3. Stir in the beaten egg to make a soft dough and empty the bowl onto a floured surface
4. Knead for 5 minutes until the dough becomes smooth and place in an oiled polythene bag. Place in the fridge for 10 minutes
5. Whilst the dough is in the fridge, mix the almonds, sugar and lemon together
6. Slowly add a beaten egg to the almond mix until it becomes soft. Make sure it does not become sticky.
7. Knead the almond paste into a ball
8. Remove the dough from the fridge. Roll out the dough into a strip 10 by 53cm and approximately 3mm thick
9. Thinly roll almond paste into a 48cm long roll
10. Take the cherry halves and press into the almond paste
11. Place the almond cherry paste onto the centre of the pastry
12. Fold the upper edge of the pasty over the paste
13. Damp the lower edge with water and curl it over the paste to overlap the first pastry flap. Then press the edges together.
14. On a baking sheet, place a 6 inch saucepan. Curl the pastry around the outside of the lid with the seem underneath
15. Remove the lid and dampen an end of the pastry roll with water and insert into the other
16. Cover with a teatowel and leave for 15 to 20 minutes to rise
17. Add glaze by brushing with a beaten egg
18. In a preheated oven 230°C / 450°F for approximately 20 minutes or until it has risen and is golden brown
19. Whilst in the oven, mix some apricot jam with water, heat and then sieve the mix
20. Remove the ring from the oven brush the ring with the apricot and arrange the remaining cherries in the middle around the ring
21. Whilst still hot coat with the lemon glace icing.
