Sírópskökur (Syrup Cookies)

Ingredients

1 egg
1˝ teaspoon baking soda
2˝ teaspoon cinnamon
2˝ teaspoon cloves, ground
200g golden syrup
200g unsalted butter
250g brown sugar
500g flour

Method

1. Mix the flour, cloves, cinnamon and baking soda together into a bowl
2. Add in the soft butter into the mix until it becomes crumbly
3. Add into the mix the syrup, brown sugar and egg.
4. Ensure that all the ingredients are mixed together and empty the mix onto a floured surface
5. Knead the mix until smooth. Place back into the bowl, cover with cling film and refrigerator for 2 to 3 days
6. Remove from the fridge and roll the dough to a thickness of 2 to 3mm on a floured surface, then with cookie cutters cut out the cookie shapes
7. Place the cut out cookies onto a lightly floured baking sheet, then place in a preheated oven of 350°F/175°C.
8. Cook the cookies until the edges darken, approximately 5 minutes
9. Remove from the oven and allow to cool.

Rauđkál (Pickled Red Cabbage)

Ingredients

˝ cup sugar
˝ cup white vinegar or red wine vinegar
1kg red cabbage, shredded
2 to 3 tablespoons butter
2 to 3 teaspoons salt

Method

1. Over a medium heat melt the butter in a medium or large size saucepan
2. Finely chop or shred the red cabbage, add to the butter and stir until the red cabbage is coated
3. Add the vinegar, salt and sugar to the cabbage when it starts to sizzle
4. Simmer the cabbage for 45 minutes to 1 hour
5. Can be serve hot or cooled with most meats goose, duck, turkey, lamb and ham.
