Piparkukas (Christmas Gingerbread)


⅓ cup brown sugar
⅓ cup honey
⅓ cup molasses
˝ cup butter
˝ teaspoon baking soda
˝ teaspoon black pepper
˝ teaspoon cardamom
˝ teaspoon clove
˝ teaspoon coriander
˝ teaspoon nutmeg
1 teaspoon cinnamon
1 teaspoon ginger
1˝ teaspoons baking powder
2 eggs
3 tablespoons lard
5 cups flour

1. Mix the brown sugar, lard, molasses and butter over a medium to low heat in a saucepan, stirring constantly
2. Ensure the mix does not boil or is scorched
3. Remove the saucepan from the heat and add 2˝ cups of flour, the clove, nutmeg, cardamom, coriander, cinamon, ginger, black peper and mix thoroughly
4. Set aside and allow to cool until lukewarm, stirring occassionally
5. Beat the eggs lightly and mix into the dough then allow to cool completely
6. Mix together the flour, baking soda and baking powder and sieve, gradually adding to the dough stirring thoroughly
7. Continue adding the flour until it is not possible to stir the dough
8. Knead the dough in the bowl
9. Empty onto a floured surface and continue to knead until smooth (May need to add additional flour)
10. Put the dough into a bowl greased with butter and cover with a cloth. Allow to rest for up to 2 hours
11. On a floured surface roll out a piece of the dough very thinly
12. Cut out shapes with a cookie cutter and place on a baking tray (Do not grease the tray)
13. Preheat oven to 400°F and cook the cookies for 5 to 6 minutes only
14. Take the cookies out of the oven and allow to cool on the baking tray
15. Once the cookies are cool they should slide of the tray. If not put them back in the oven for 1 to 2 minutes
