Imbuljuta (Hot Chestnut Soup)


1lb (400g - 500g) chestnuts, dried
1 tablespoon cocoa powder
1 tangerine, peel finely chopped
6oz (150g) caster sugar

1. Ensure you wash the chestnuts thoroughly
2. In a large bowl place the chestnuts and cover with water
3. Leave then to soak overnight
4. Remove any loose pieces of skin from the chestnuts
5. Boil the chestnuts until they are tender
6. Add the cocoa powder, sugar and tangerines and cook for a further 30 minutes
7. If the soup is still watery, continue to cook until it is reduced further
8. Add additional cocoa for sweetness if required and serve hot.
