Ensalada de Navidad (Mexican Christmas Salad)

Ingredients

Salad Ingredients
cup unsalted nuts, almonds or peanuts
fresh pineapple, peeled, cored and diced
1 apple, peeled and diced
1 large banana, diced
1 large carrot, cooked and diced
1 orange, peeled and chopped
2 small beetroots cooked, peeled and diced
seeds of small pomegranate

Salad Dressing Ingredients
teaspoon sugar
1 tablespoon lime or lemon juice
3 tablespoons olive or vegetable oil
pinch of salt

Method

1. In a large salad bowl mix the fruit
2. In a salad dressing bottle or a clean jar with a screw top lid, add the olive oil, sugar, salt, lemon or lime juice.
3. Shake well until the ingredients have blended and the sugar has dissolved
4. Garnish the salad with pomegranate seeds and nuts
5. Refrigerator, then serve chilled.

Champurrado (Chocolate Atole)

Ingredients


1 cup brown sugar
1 cup masa harina (cornflour)
2 cups water
3oz Mexican Ibarra chocolate (or dark cooking chocolate, unsweetened)
6 cups whole milk

Method

1. In a saucepan heat the chocolate and milk until the chocolate melts and dissolves.
2. Remove the saucepan from the heat and keep the saucepan in a warm place
3. In a clean saucepan mix the masa harina and the water and add a cinnamon stick
4. Over a low heat cook the mix until it thickens and the masa in translucent
5. Add to the masa, the chocolate mix, sugar and simmer for a few minutes to dissolve the sugar
6. Remove the sinnamon stick and serve.
