cup sugar, superfine
1 teaspoon vinegar
1 cups double cream
2 teaspoons cornflour
4 egg whites (room temperature)


fresh fruit, sliced mango, strawberries, passionfruit or fruit of your choice

1. In a large bowl beat the egg whites until they form soft peaks
2. Gradually add 3 teaspoons at a time to eggs beating constantly until the eggs become thick and glossy and all the sugar dissolves
3. Add and beat the vinegar and vanilla extract to the mix, until combined
4. On a large baking tray brush some oil or melted butter and line the base with cooking paper
5. Over the paper, lightly dust the paper with sifted cornflour and remove off the excess
6. Mark a 7 to 8 inch circle in the middle of the tray, using a cake bin or pan lid
7. On the marked circle spread the mix and place in a preheated oven of 250F/150C
8. Bake the mix (meringue) for 1 hours or until it becomes pale and crisp
9. Allow the meringue to cool completely in the oven with the oven door ajar
10. Once the meringue (pavlova) is cooled remove from the oven and with a flat bladed knife cut away from the paper and place on a serving plate
11. In a clean bowl add the cream and beat until stiff peaks are formed
12. Spread the cream over the top of the pavlova and decorate with fruit.
