Ingredients

¼ teaspoons ginger
½ teaspoons nutmeg, ground
¾ teaspoons pepper
1kg pork ground
3 teaspoons salt
5 tablespoons potato flour
50ml milk

Method

1. Either use minced pork or ground your own pork with pork fat (ensure that 20% of the pork is fat)
2. Use a bowl and add the salt and mix with the pork until it becomes sticky
3. Add the flour, ginger, nutmeg and pepper and mix
4. Slowly add the milk (full fat) ensuring that the meat remains sticky
5. The meat should not be too firm
6. Roll the meat into small ball
7. Heat up a frying pan until it is hot and fry the meat balls until they are a chestnut brown
8. Remove the meat from the frying pan and simmer in boiling water or broth for 10 minutes
9. Remove from the broth or water and serve.

Julekake (Norwegian Christmas Bread)

Ingredients

½ cup margarine
½ cup sugar
½ cup water
½ cup milk
½ teaspoon cardamom, ground
2 cups milk
2 cups candied fruit, mixed diced
2 packages yeast, rapid rise
2 teaspoons salt
8 cups flour (4 x 2 cups)

Method

1. In a saucepan melt the margarine with the milk and water
2. Combine 4 cups of flour, yeast, sugar and cardamom in a large bowl
3. Add into the bowl the margarine mix and combine, using an electric mixer.
4. Mix until the mixture falls away from the beaters
5. Add and stir in the mix the candied fruit
6. Slowly add the rest of the flour and knead in the bowl until it is smooth and elastic
7. Grease a bowl and place the dough
8. Cover the bowl with a teatowel and leave in a warm place for approximately 1 hour
9. Punch the dough and place it on a lightly floured surface
10. Shape the dough into two loaves and place into greased loaf pans (9 x 5 x 3 inch loaf pans)
11. With milk brush the tops of the loaves
12. Cover and allow the dough to double in size. This will take approximately 45 to 50 minutes
13. In a preheated oven of 375°F/190°C place the tins for 30 to 40 minutes until they are lightly browned.
