Sarmale (Romanian Cabbage Rolls)

Ingredients

½ tablespoon pepper black
½ tablespoon sweet paprika
½ lb bacon, finely diced
1 bay leaf
1 smoked ham hock
1 cup rice
1 cup tomato juice
1 cup tomato sauce
1 quart sauerkraut, large jar
1 tablespoon salt
1½ cups celery, finely chopped
1½ lbs pork, ground
2 tablespoons fresh parsley, finely chopped
3 lbs cabbage
4 medium onions, finely chopped
4 tablespoons vegetable oil

Method

1. Boil enough water in a large pan that will cover the cabbage you are going to use
2. Remove from the cabbage its core.
3. Add to the water ¼ cup of vinegar and 2 tablespoons of salt and immerse the cabbabe in the water
4. Over a medium to high heat cover the pan and cook for 5 to 7 minutes
5. Remove from the water and with tongs remove the tender leaves and drain. Allow them to cool. The leaves should be flat
6. Using a large frying pan, heat the oil and fry the onions, bacon, pepper, salt, celery, parsley, paprika and saute until the mix is a light golden colour
7. Remove from the heat and allow to sit for ½ hour
8. To the mix added the ground pork, sauteed onions and rice along with ½ cup of water, and mix well. This will be the meat filling
9. In the centre of the cabbage leaf place 1 to 2 tablespoons of the filling
10. Fold the right side of the leaf over the filling
11. Then roll long ways and tuck the ends into the roll
12. Drain the juice out of the sauerkraut
13. Place ½ of the sauerkraut from the jar in the bottom of a cooking pot
14. If you have any of the cabbage leaves left over, place them on top of the sauerkraut
15. Place and layer the cabbage rolls on top of the sauerkraut, roll seam down.
16. Place the other ½ of the sauerkraut from the jar on top of the rolls
17. On top of the sauerkraut spread the tomato juice and sauce, with 1 bay leaf
18. Cover the rolls with just enough water, place the lid on the pot and bring to the boil
19. Reduce and simmer for 2 hours
20. Can be served with sour cream.

Cozonac or Colac (Romanian Christmas Bread)

Ingredients


½ cup butter, melted
1 yeast cake (2oz yeast)
1 cup milk, heated
1 teaspoon salt
2 teaspoons sugar
3 eggs, beaten
3 tablespoons sugar
4 cups flour

Cheese Filling Ingredients
½ pint sour cream
1 teaspoon cornstarch
1 cup cream cheese
2 teaspoons vanilla or lemon flavoring
3 egg yolks
4 tablespoons sugar

Method

1. Crumble yeast into a bowl and add 2 tablespoons of milk and 2 tablespoons of sugar
2. Heat 1 cup of milk in a saucepan until it is lukewarm
3. Add to the lukewarm milk 3 tablespoons sugar, melted butter and beaten eggs
4. Add the yeast mix to the milk and beat well
5. Place 4 cups of flour in a bowl and pour in the milk mix and work in with a spoon, until well mixed
6. On a floured surface knead the flour mix
7. Place the dough in a bowl and cover with a tea towel, until it doubles in size
8. Punch down the dough and knead again for 2 minutes
9. Allow to rise again
10. Add to the cream cheese, egg yolks and cornstarch and mix well
11. Add to this sour cream, 1 to 2 tablespoons at a time and mix quickly
12. Add the flavouring and 4 tablespoons sugar and mix well. This makes the filling
13. Roll out the dough and cover with the filling, then roll the dough over the filling
14. In a preheated oven of 350°F/180°C bake for approximately 45 minutes.
