Kapustnica (Christmas Eve Sauerkraut Soup)

Ingredients


1 pair of klobasa (smoked pork sausage)
1 teaspoon salt
1 kg (3⅓lb.) sauerkraut
100 ml (⅓ cup) cooking oil
1kg (2lb.) smoked meat (pork or beef)
2 garlic cloves
20g paprika
50g (1⅓oz) dried mushrooms, soaked in warm water for 20 minutes then drained
150g (1 cup) flour, finely ground
black pepper
cream
parsley, minced

Method

1. In water rinse the meat and sausage
2. Place in a large pot the meat, sausage, sauerkraut and 2 litres of water
3. Stir the mix and bring to the boil. Add salt to taste
4. Reduce the heat and simmer for 1 to 1 hours, or when the meat is tender
5. When the meat is tender add the mushrooms and cook for a further 30 minutes
6. In a frying pan heat some oil, fry the onion slowly until it is transparent
7. Add the flour, paprika and stir into the onion
8. Slowing mix in 300ml of water, stirring constantly
9. Once the flour mix is blended add it to the soup
10. Cook the soup for a further 15 minutes to allow the soup to thicken
11. Roughly chop the skinless garlic and pepper to taste, towards the end of the cooking
12. Serve with parsley and a dollop of cream.

Slovak Christmas Honey Cookies

Ingredients

cup honey
lb sugar, dark brown
1 teaspoon vanilla
1 teaspoon baking soda
1lb flour
2oz butter
5 eggs

Method

1. In a large bowl mix the sugar, baking soda, butter and flour
2. Add 4 beaten egg and honey to the bowl and mix well
3. Leave to set in the fridge overnight
4. On a floured surface roll out the dough to ⅛ inch thick and then cut out with cookie cutters
5. On a greased baking tray place the cookies 3 inches apart and beat an egg and brush the cookies
6. In a preheated oven of 450F/230C bake for 7 minutes.
