Risgrynsgröt (Rice Pudding)

Ingredients


1 tablespoon brown
1 teaspoon cinnamon, optional
1½ cups arborio or short grained white rice
2½ cups whole milk
3 cups water

Serves 4 to 6

Method

1. In a medium sized saucepan boil the water
2. Add the rice to the water and reduce the heat to its lowest setting so the water simmers and cover for 20 minutes
3. Drain the rice in a sieve and replace the rice in the saucepan
4. Stir cream and milk into the rice over a low heat, the mixture should be creamy. Add more millk and cream if required.
5. Remove from the heat and rest for 1 hour
6. Serve in a bowl and sprinkle cinnamon and brown sugar and serve.

Julskinka (Christmas Ham)

Ingredients


1 egg yolk
1 ham slightly salted, 9 to 11 pounds
3 tablespoons bread crumbs, fine and dry
3 tablespoons Swedish mustard

Serves 4 to 6

Method

1. In a preheated oven of 250°F/120°C, place the ham on a rack in a roasting tin and roast for 4½ to 5 hours
2. Remove the ham from the oven and increase the oven temperature to 450°F/230°C
3. In a small bowl mix the sugar, egg yolk and mustard.
4. Remove the rind from the ham and brush the ham with the mix.
5. Sprinkle the breadcrumbs over the glaze mix and return the ham to the oven
6. Cook for a further 10 minutes until the glaze is a golden brown.
