Zimtsterne (Cinnamon Christmas cookies)

Ingredients

½ tablespoon kirsch
1 pinch of salt
1½ tablespoons of cinnamon
3 egg, white
250g (9oz) sugar, icing
350g (12oz) almonds, ground

Method

1. In a bowl stir the egg whites and salt until really stiff
2. Stir in the icing sugar until evenly distributed (Put ¼ cup aside for frosting.)
3. Add to the mix, the kirsch, cinnamon and ground almonds
4. Knead the mix in the bow.
5. Empty the dough out of the bowl and roll it out on a slightly sugar covered flat surface to a thickness of 7mm
6. Cut out the dough into shape of choice and put them on a baking tray, covered with baking paper
7. Rest the cookies for overnight or 5 to 6 hours in a dry place
8. With the frosting carefully brush the cookies
9. In a preheated oven of 480°F/250°C bake the cookies for 3 to 5 minutes
9. Allow to cool before serving

Chicorée Neuchâteloise (Endives baked in cream)

Ingredients


1 cup breadcrumbs, coarse
1 cup chicken stock
1 cup freshly grated Parmesan or/and Gruyere cheese
1 tablespoon butter
1 tablespoon lemon zest, finely grated
1 tablespoon olive oil
2½ cups heavy cream
6 Belgian endive (chicory)
ground black pepper
salt

Method

1. Remove any loose leaves then halve the endive lengthways
2. In a pan of boiling salt water boil for 30 seconds, then plunge the endive into ice water
3. Drain the endive and pat dry
4. In a frying pan cook the endive in oil and butter until they are lightly browned and set aside the endive on paper towels
5. In a separate saucepan add the stock and cream and bring to the boil then simmer and reduce by half
6. Take off the heat and stir in half the cheese with half the zest until smooth and season with salt and pepper
7. In a buttered baking dish place the endive cut side down
8. Over the endive pour the mix and cover with the remaining cheese
9. Mix the remaining zest and breadcrumbs together and sprinkle on top of the cheese
10. In a preheated oven of 375°F/190°C bake for 25 minutes until slightly browned.
