Oyster and Ham Pie

Ingredients


cup cured ham, chopped
cup flour
cup milk
cup white wine
1 onion, chopped
1 pint fresh oysters with liquid
2 tablespoons of butter
2 cups peas

Method

1. In a saucepan add 1 tablespoons of butter and saut the onions until golden brown
2. Remove the onions and melted butter and place aside
3. Add the rest of the butter, then melt and gradually add the flour and blend well. Allow to cool
4. To the flour mix gradually stir in the milk and simmer
5. Separate the oysters from the liquid and add the oyster liquid and wine to the flour mix to make a thick sauce
6. To this mixture add the oysters, peas and ham and mix then add to an ovenware pot
7. In a preheated oven of 400F/200C place the dish and cook for 15 minutes, so the peas are just done.

Pumpkin Pie

Ingredients

Filling Ingredients
teaspoon cinnamon, ground
teaspoon ginger, ground
teaspoon nutmeg, ground
teaspoon salt
cup brown sugar
1 can (12 floz) evaporated milk
2 cups mashed, cooked pumpkin
2 eggs, beaten

Crust Ingredients
cup cold water
1 cup shortening
1 teaspoon salt
2⅔ cups all-purpose flour

Method

1. Cut the pumpkin in half and scoop out all the seeds and remove the stringy portions, then cut the pumpkin into chunks
2. In a saucepan boil 1 inch of water, add the pumpkin and add bring to the boil
3. Reduce the heat to low, cover and then simmer for 30 minutes, or when the pumpkin becomes tender
4. Remove from the water, allow to cool and remove the pumpkin peel
5. Add the pumpkin back to the saucepan and mash (potato masher is fine) then drain well
6. In a bowl add the flour, salt and mix, then add the shortening into the flour plus 1 tablespoon of water and mix the dough. Continue adding the water until the dough is moist enough to bind together
7. Lightly dust your hands with flour and shape the dough into a ball
8. On a floured surface roll the dough out until about ⅛ inch or ⅓ cm thick
9. Turn a 8 to 9 inch pie pan upside down and cut 1 inches wider around the pan
10. Turn the pan the correct way up, roll the dough around a rolling pin and then unroll the dough cover the pan, completely covering it. Gently push the dough into the pan
11. Add the pumpkin, eggs, evaporated milk, cinnamon, brown sugar, nutmeg, ginger and salt to a bowl and mix well
12. Pour the mix into the crust / pan, then place into a preheated oven of 400F / 200C and bake for 40 minutes.
