Gluten Free Chocolate Yule Log Recipe
2 tablespoons hot water
5 large eggs
6oz caster sugar
6oz plain chocolate

1.Preheat the oven to 180ºC (350ºF). For fan oven 160ºC fan oven.
2.Use a baking tin approx. 13½” x 9” brushed with oil or butter and line the tin with baking paper cut. Cut the paper so that the length is long enough to overlapthe ends. Ensure that you lightly oil the paper.
3.Break the chocolate into a bowl.
4.Place bowl over a saucepan of simmering water and leave until chocolate softens.
5.Separate the eggs into two bowls. Place the yolks into a a large bowl.
6.Add the caster sugar to the yolks and whisk until the mixture thickens.
7.Once the chocolate has melted remove from the heat.
8.Stir in the hot water (2 tablespoons) from the saucepan into the chocolate and allow to cool, slightly.
9.Slowly whisk the chocolate into the egg mix.
10.In a separate, clean bowl whisk the eggs until they become stiff.
11.With a tablespoon mix in one spoonful into the chocolate mix. This will loosen the mix.
12.Use the rest of the egg whites and gently fold into the chocolate mix.
13.Pour the mix into the baking tin. Ensure that it is even and fills the corners.
14.Place into the preheated oven for 15 to 20 minutes until firm to the touch.
15.Remove from the oven, cover with greaseproof paper, paper a tea towel over the top and leave until cold.
16.Dust a sheet of greaseproof paper with icing sugar.
17.Turn the mix out onto the iced paper and peel away the baking paper.
18.Whip the cream and spread across the mix. Add fruit if desired.
19.Using the greaseproof paper, roll up the mix. Allow to chill and finish with icing sugar.
