Classic Gluten Free Stuffing

Ingredients


½ teaspoon pepper
½ teaspoon salt
1 cup chicken stock 
1 egg yolk
1 large yellow onion, medium diced
1 tablespoon fresh rosemary, finely chopped
1 tablespoon fresh sage, finely chopped
1 tablespoon fresh thyme, finely chopped
2 large celery sticks, medium diced
2 loaves gluten-free bread (Cut into one-inch cubes, toasted and allow to cool)
2 tablespoons garlic, finely chopped 
2 tablespoons olive oil

Method

1. In a covered saucepan, sautee the celery and onion in olive oil over a low heat.
2. Once translucent add the garlic, rosemary, sage and thyme and cook for a few minutes. Then remove from the heat.
3. In a separate saucepan allow the chicken stock to come to the boil
4. In a medium sized bowl and the egg yolk then ladle in 3 fluid ounces of the chicken stock. And gently whisk the mix.
5. Then add the remaining stock slowly, whisking constantly. Followed by the cooled herb mix.
6. To the mix add the toasted bread cubes and stir with a spoon or use your hands, until the cubes are coated. Season with salt and pepper.
7. Ideally use a non-stick casserole dish or large pyrex dish. Add the mix and cover with foil.
8. Place in a preheated oven of 425°F (220°C) for 20 minutes.
9. Remove the foil and bake for an additional 10 minutes.
10. Using a cooking skewer, set the stuffing. If the skewer comes away clean it is ready.

Gluten Free Chestnut Stuffing Recipe

Ingredients


½ teaspoon freshly grated nutmeg
1 teaspoon grated lemon rind
2oz gluten free breadcrumbs
25g butter
100g dried chestnuts (soaked in water overnight or packet)
200ml chicken stock
pinch cayenne pepper

Method


1. In a large saucepan, add the stock, onion and chestnuts. Bring to the boil then simmer for 45 minutes, until the chestnuts are soft.
2. Drain the remaining fluid into a jug.
3. Add the chestnut mix into a blender with the nutmeg, lemon, breadcrumbs, butter and cayenne pepper and blend.
4. Add the remaining fluid from the jug so that the mix remains moist, but do not over blend.
5. The stuffing can be added to the neck of the bird or cooked in a separate covered oven dish for 30 to 40 minutes.
